Gonzalo Martinetti is a man with a mission; to protect the unique cocoa tree species Nacional Arriba in its puriest form. Although botanically a Forestero type, Ecuador's Nacional Arriba is famous for its fine taste. Sub-species without the fine taste have been planted on some plantations and Gonzalo runs programs to encourage the cultivation of the real Nacional Arriba. This is the same couverture used by Calgary's River Cafe which received the 2008 "Calgary's Best Restaurant Award" by Avenue Magazine and the 2007 "Best of Award Excellence" by Wine Spectator Magazine. The River Cafe is the only restaurant in North America which uses Coppeneur couverture. Tasting Notes: Strong cocoa colour owing to the dark Nacional beans.
